erasing partitions/logical drives

Hi,
my computer has several Windows XP and Linux partitions.
The first partition is a ntfs formatted Windows partition,
the 2nd an ext3 formatted linux partition. The 3rd one
is an extended partition containing (in this order) a
ntfs formatted logical drive and two ext3 formatted
logical linux drives. What I want to do is completely erasing
only the contents of the Windows partitions/logical drives
so that no Linux data is destroyed and that I can reinstall
Windows again. What does "erasing a partition" mean?
I don't want to erase the entrys of the Windows drives
in the partition table, only the *contents* of the partitions.
How can I do that?
