I have an old laptop that is currently being used (probably about 10 years old). However, over the years, it has contained some sensitive documents that have since been deleted.

What should I do to ensure that those documents are not recoverable?

Just make the disk broken.

A computer savvy is able to recover the deleted files even if you have emptied the recycle bin. If you are not going to give your computer to someone else, the data would be disappeared for good.
