As we know, we can create an iTunes backup easily. However, when we want to extract data from the backup file, we even can not read it.

Way 1.

When we have backups on iTunes, we can restore those data from iTunes directly, but it doesn't support us to restore them selectively, see below steps.
1. Launching your iTunes, connect your iPhone with PC.
2. When it's recognized, go to Files--Summary, then you can see all your backup files on the left side bar.
3. Choose the backup files you need, tap on "Restore Backup" on the right page, and confirm with "Restore".

Way 2.
also when you need to restore data from iTunes backup selectively, iRefone can help you with it.
you can download the free trial version from its website, and follow below steps to have a try.
1. Run iRefone, launching your iTunes. choose "Recover from iTunes Backup", then all your backup files on iTunes will show up.


2. Then find the one you need, and click "Select" at the end of the files you need. then we'll enter the new interface with many data icon , find and click "Message" icon for example, and it will be scanned by iRefone.


3. When finish scanning, you can preview and choose messages you need selectively, and recover them by clicking "Recover to PC".
 
If you have iTunes backup, you can preview the exact data in the backup files and then choose the data you want and extract them out to your computer easily. All you need is a third party software - Jihosoft iPhone Data Recovery.

To extract data from iTunes backup file, you need to scan it and analyze it with professional iTunes Data Recovery program. It can find all the data in your backup file and list them for you. Yes, you are right. To extract data from iTunes backup, we need to ask help from such tool. Cause [restore from iTunes backup] will restore all iTunes backup files. If you just want to recover some import data from iTunes backup files, iPhone data extractor tool is needed.

In fact, if we have backup in iTunes, just log in iTunes, connect your iPhone to iTunes, then restore from backup. Or you have another way to restore from iTunes-with Eelphone iTunes Restore, you can restore from iTunes backup files, and you can define the restoration data type in iTunes, select what you want to restore from iTunes backup files.
