Question: If I wipe free space does the MFT, "extra structures of NTFS" and the file cache get wiped as well.

Wiping freespace will wipe all clusters marked as free by the os.
The file cache will be held in memory and pagefile or the HD onboard cache. Wiping the pagefile on shutdown will clear that as well.

Running defrag after all that will remap the mft.
