I can reproduce this bug (in the development builds as well as the stable version), and have filed a bug report (ticket #386) in Trac . The bug may not however be fixed in a stable version until 6.2 is released.
The bug is in fact rather worse than your description. There is no obvious consistency between the date set in the dialog and the date of the first run; I have yet to find a way of setting the task so that it executes on the chosen date. Also, when I run the development build under 6.0.7 the schedule dialog appears incorrect when I open it for editing.
I'm sorry this has not been picked up in previous testing. It only goes to confirm that users are the best testers!
